I have seen and heard about cauliflower pizza crust for awhile now, and I finally decided I needed to see what the big fuss was about. We actually tried two recipes, so the recipe I am posting is a little combo of the two. A few notes about making this: It smells. Kinda like cooked cabbage only not as strong. So if you’re about to have company over, don’t make this! Also, it’s a little messy. You have to put the cauliflower in the food processor and I made the mistake of putting too much in at once. Had to take out what was chopped and put back in the bigger pieces. Raw cauliflower in tiny little rice-like pieces can be messy, so don’t do what I did.
My suggestion is after you have made your cauliflower pizza crust once and if you like it and want more, I would make several at once and freeze them. I will probably make more, just because I am trying to eat healthier. This recipe is like a “personal pizza”. Don’t expect it for a meal to feed the whole family. And don’t expect it to taste like a crust, because it doesn’t. Is it gross? Absolutely not. I like cauliflower though, so that should factor pretty heavily. I’m also trying to cut back gluten in my diet because it seems to irritate my tummy, so that would be another reason why someone might want to try making a cauliflower pizza crust. If you aren’t trying to eat healthier, get in some more veggies into your diet, or if you have some kind of wheat/gluten allergy, I don’t know if this is the recipe for you.
The first recipe had flax seed in it, which I used to make it only because I happened to have some here. This recipe also had an additional step (which involved putting the cooked cauliflower into a dishtowel and squeezing out the water) which was messy. So the second one I tried, I liked it just because the preparation on it was easier.
1 head of cauliflower (enough to have about 3 cups once chopped)
1 egg (beaten)
1 clove garlic (crushed in a press) or 1/2 tsp minced garlic
1/3 cup mozzarella cheese
salt and pepper to taste
Preheat the oven to 400 degrees. Use parchment paper to cover a small cookie sheet and spray with cooking spray and set aside. Pull off leaves of cauliflower and then break off pieces or cut pieces small enough to go in the food processor. Put cauliflower into food processor and chop until it’s a rice-like consistency. Put chopped cauliflower into a microwave safe dish and microwave for about 8 minutes. remove and allow to cool.
Once cooled, add your beaten egg, garlic, mozzarella cheese and some salt and pepper. It should be rather sticky. Dump it on your cookie sheet and use your spoon to flatten out the mixture. Try and make it pretty thin; I made mine into a circle. Bake for 10 minutes. While your crust is baking, get another piece of parchment paper out (for the same cookie sheet, and spray it with cooking spray. Remove crust from over and gently lift up and flip the crust over onto the new parchment paper, gently pull off the top piece of parchment paper and put back into the oven and cook for 10 more minutes. Remove from oven and allow to stand for about 3 or 4 minutes. Add whatever toppings you want, then put back into the oven on broil. If you are using things like fresh veggies, you may need to saute them first.
